This soup was inspired by a recipe I found on Martha Stewart's website. I re-worked it to make it an Evolution Catering favorite. This is the perfect soup for a cold winter night, with hearty mushrooms and a clear tomato-vegetable stock.
Ingredients (serves 2)

- 2 small leeks, chopped
- 1 small red onion, chopped
- half pound mushrooms, chopped or sliced (I use portabella, cremini and shitake)
- 1 small clove garlic, minced
- 1 teaspoon chile powder
- 1 tsp. tomato paste
- 1/2 cup wine (red or white is fine)
- 1 small can diced tomatoes or a handful of fresh diced tomatoes if in season
- 2 cups stock (chicken or veggie)
- Saute leeks and onion in a tablespoon of olive oil
- Add mushrooms, brown
- Add garlic, chile powder and tomato paste, saute one minute
- De-glaze pan w/ wine
- Add tomatoes and stock
- Cook down for half an hour at a low simmer
