Mushroom Leek Tomato Soup- Available to order this week


This soup was inspired by a recipe I found on Martha Stewart's website. I re-worked it to make it an Evolution Catering favorite. This is the perfect soup for a cold winter night, with hearty mushrooms and a clear tomato-vegetable stock.

Ingredients (serves 2)
  • 2 small leeks, chopped
  • 1 small red onion, chopped
  • half pound mushrooms, chopped or sliced (I use portabella, cremini and shitake)
  • 1 small clove garlic, minced
  • 1 teaspoon chile powder
  • 1 tsp. tomato paste
  • 1/2 cup wine (red or white is fine)
  • 1 small can diced tomatoes or a handful of fresh diced tomatoes if in season
  • 2 cups stock (chicken or veggie)
Directions
  1. Saute leeks and onion in a tablespoon of olive oil
  2. Add mushrooms, brown
  3. Add garlic, chile powder and tomato paste, saute one minute
  4. De-glaze pan w/ wine
  5. Add tomatoes and stock
  6. Cook down for half an hour at a low simmer

Best Friend's Wedding Weekend

Thank you to all of my clients who gave me Martin Luther King Jr. Day off!
We did a special Tuesday delivery this week not only to commemorate MLKJ Day, but because my best friend, Lauren got married Sunday night in Austin, TX.


It was an amazing weekend, full of laughter, tears and great food! Thank you for being flexible this week and taking your deliveries a day late. I really appreciate being able to be a part of such a special day in my friend's life. Plus, I had to be there for my the toast, right?!


Unfortunately I didn't take a picture of the dinner at Barton Creek Resort, but it was fabulous! My favorite dish was the ahi tuna hors d'oevre served on a crisp wonton, followed by a flaky crab cake.

The wedding was beautiful, and Chris and I took notes for our own wedding, coming up in September 2010 (to be catered by Evolution, of course!)

Spicy Chorizo Chili


Spicy Chorizo Chili
Available to order this week!

This is one of my favorite meals on a cold winter night!
With a noticeable kick, this chili will be sure to warm you up.

Ingredients (serves 4)
  • 2 tablespoons butter
  • one small red onion, diced
  • 2 chorizo sausages, removed from casing
  • one teaspoon cumin
  • one teaspoon chili powder
  • 1/2 cup red wine
  • 16 oz. chicken stock
  • one can (16 oz) diced tomatoes
  • 12 oz of canned beans (a variety of kidney, black, white)
  1. Caramelize onions in the butter until soft, season with s&p
  2. Add chorizo, and cook until browned through, breaking up sausage with wooden spoon
  3. Add cumin and chili powder
  4. Deglaze pan with wine
  5. Add stock, tomatoes and beans
  6. Reduce at least 30 mins.
  7. Taste and re-season
  8. Reduce further for a deeper flavor

Happy 2010!

Kat kicks back with her fiance and his family

Hi Everyone!

Sorry for the 2 week lapse in blogging! I took a week off from the business to relax with my fiance in Virginia. It was SO nice to spend time with his family, play in the snow and just basically do nothing. Also, Chris' mom is an amazing cook, and we woke up to fresh made blueberry muffins, buttermilk biscuits and buckwheat pancakes every morning. Now, although this isn't Paleo, I couldn't say no! Mrs. Frank even grinds her own wheat to make the best baked goods ever. And I had to take advantage of it since I never make that kind of stuff at home :)


After a week of indulgence, it feels great to be back to our normal way of eating. We got back on track pretty quickly by roasting a big chicken and a bunch of veggies and eating that for a couple of days. Then yesterday we had fish and spinach for dinner.
