Spicy Chorizo Chili

With a noticeable kick, this chili will be sure to warm you up.

This is one of my favorite meals on a cold winter night!
With a noticeable kick, this chili will be sure to warm you up.
Ingredients (serves 4)
- 2 tablespoons butter
- one small red onion, diced
- 2 chorizo sausages, removed from casing
- one teaspoon cumin
- one teaspoon chili powder
- 1/2 cup red wine
- 16 oz. chicken stock
- one can (16 oz) diced tomatoes
- 12 oz of canned beans (a variety of kidney, black, white)
- Caramelize onions in the butter until soft, season with s&p
- Add chorizo, and cook until browned through, breaking up sausage with wooden spoon
- Add cumin and chili powder
- Deglaze pan with wine
- Add stock, tomatoes and beans
- Reduce at least 30 mins.
- Taste and re-season
- Reduce further for a deeper flavor
