Monday 2/7:
  • dinner: spinach stuffed tilapia
Tuesday 2/8:
  • breakfast: chicken apple sausage fritatta
  • snack: side of berries
  • lunch: (health nut salad)mixed greens salad with grilled chicken, kale, red peppers, avocado, sliced almonds, lemon vinaigrette
  • dinner: salmon burgers with black beans and spinach
Wednesday 2/9:
  • breakfast: hard-boiled egg with guacamole, slice of turkey and tomato
  • snack: almonds
  • lunch: fennel apple salad
  • dinner: chicken tikka masala
Thursday 2/10:
  • breakfast: veggie frittata
  • snack: orange
  • lunch: tuna nicoise salad with a side of mixed greens
  • dinner: Mushroom Polenta "Lasagna" (polenta instead of pasta!)
Friday, 2/11:
  • breakfast: apple with almond butter
  • snack: trail mix
  • lunch: butternut squash soup
  • dinner: jerk chicken with fresh veggies
