My Classic Meatloaf Recipe (available this week!)
Kat's Classic Meatloaf
Serves 4 generous portions
- 2 lbs. ground beef
- 1 small diced red peppers
- 1 small diced yellow onion
- diced garlic
- 2 eggs
- 1.5 cups breadcrumbs
- 1 .5 cups parmesan (shredded)
- 1/8 cup balsamic vinegar
- 1/8 cup worcestershire
- 2 tsp. salt
- 2 tsp. pepper
1. Dice the veggies (dime-sized) and saute them together until softened
2. Allow veggies to cool
3. Mix beef w/ everything, kneading everything together
3. Bake in a loaf pan, or on a baking sheet (just form into a big mound) about 45 mins @ 375 (maybe less for a smaller version, check after 30 mins)
4. Check to make sure it's cooked through with a meat thermometer or by peeking into the center

Evolution Gives: Delivering to Families in Need
I am so excited to present to you my new project, a foundation called
Evolution Gives!
My family was recently affected by colon cancer. It is easy to feel helpless, like there is nothing you can do to help a relative get through a struggle like this. So instead of sitting around feeling effortless, I decided to do something to help other families through tough times.
I started thinking, well what can I do about this? I can't cure cancer. I barely passed my college biology class! All I really know how to do is cook. Then it occurred to me that families suffering with illness probably have a tough time putting healthy homemade meals on the dinner table every night. With distractions like doctors appointments, and tending to the ill person in the family. They could probably use a nice hot meal from time to time.
So it evolved, I created Evolution Gives, a foundation that will donate free meals to families struggling with illness.
To start out, each month I will donate a $50 gift certificate to a deserving family. Hopefully with some donations we can increase this gift certificate amount and help out more and more families over time!
We have been collaborating with UCSF Helen Diller Family Cancer Center to help reach out to familes. If you know someone who would benefit for this, feel free to pass it on to them! Also on the webpage you will see a "Donate" button. If you have been through a similar situation and want to offer a few dollars, we would love to put them to good use.
Thanks for reading. This project is very near and dear to my heart, and I am so looking forward to seeing what kind of a difference we can make!
