Beef Bordeaux





Here is a dish we made recently in Paris. The perfect slow cooked meal for a chilly night!

Ingredients (serves 4):
  • 1 lb. Cubed beef
  • 1 medium red onion (or leeks or shallots like I used)
  • red wine (we used Bordeaux)
  • 1 lb. potatoes (any kind), cubed
  • 2 cloves garlic, sliced thin
  • one can chopped tomatoes
  • half bottle wine
Directions:

1. Brown the beef at high heat with some olive oil, salt and pepper

2. Set beef aside
3. Deglaze the pan with a splash of wine

4. Add onions
5. Caramelize in butter

6. Add garlic and potatoes, cook a few minutes til you smell the garlic

7. Add tomatoes, wine and bring to a boil

8. Cover and reduce the heat to a simmer for a couple hours


Optional: Serve with a piece of grainy bread with butter or cheese melted into it, to sop up the yummy juices. Or a healthier alternative would be to serve it with polenta or brown rice or quinoa.
